This time, we will make two dish and there is the materials we need for Panna Cotta

whole milk

pure vanilla extract

unflavored gelatin

heavy cream

sugar

Cooking spray

we put the milk in the pot and warm the milk until the milk became older(Wrinkle made the milk looked older)

we dissolved the gelatin and we add the milk slowly. Then we also putted the sugar into the pot. we need make sure if the sugar dissolved. Finally we add the flavoring, cream, vanilla and salt. Remove it from heater and put it into the refrigerate for a night.

Second step, Caramel Sauce. we melt the cheese at first.
we add the cheese with cream.
After that, we mix the sugar with water
sugar syrup with high temper and we get this
it look nice.
Finally, we will make the caramel candy covered hazelnuts
we put sugar on the pot and rise the temper until the sugar boil and change color.

Oh nooooooooo!

Q: darker caramel is less sweet because it overcooked. the high temper will dissolve the molecular of the sugar and make a new staff which taste very bitter. (we successfully finished this chemical reaction and made the caramel dark and bitter)

we rolled it and make sure the staff were covered by the dough and we put it into the oven. And we get them! Questions cake flour has lowest protein so the food which made by cake flour taste loosely and softly. the olive oil

we put the egg white on a bowl and use the mixer to mix the egg white until it get a peak.

We put some sugar with water and melt the sugar in the water. then we rise temper of this to 240 degree. After that, we put this to cold water and make a soft ball.
we put the syrup into the egg white and cream (the staff which we made in picture 1). we put it on oven for 40 min.
After 40min, we get the meringue shells. we take it out from oven and put it to somewhere other place for an hours. Then we boil some water in a pot and mix the boil water with some wine, egg yolk, and sugar. we heat those staffs for half hour.

we put the zabaglione on the meringue. we also add some fruit.

1.meringue has protein. the protein would start chem reaction it will denature and coagulate during the mixing.

2. thickening of the zabaglione contributed the heating and the denature was caused and the coagulate is the final end.

3. the egg will burnt if you overcook. it will look dark and taste bitter.

The thickening and setting of the meringue is due to protein denaturation and coagulation of the ovalbumin in the egg whites. First, the protein is agitated by beating air into the mixture, then sugar is added, which dilutes the foam. This creates a looser coagulation
