Focaccia is a very simple dish, it looked like pizza but it have really different points from Pizza. there are two different dough over the cheese, just like hamburger , the meat(cheese) between two piece of bread.




at first, I add flour, water, olive oil in to the bail and make the dough, after one hour, I cut the dough to two pieces and press them. Then I put them on the plate and put cheese in the3 middle of them. I put it on oven and I finish it.

Yeast need to room temper to make more dough, and it take time.

Olive oil have C-H bond. this bond is balance and no extra electronic to share with water so , it would not dissolve by water.

the protein will be change by high temper in oven and the water will be evaporate from protein

  • 1 lb all-purpose flour
  • 1 lb Crescenza cheese, or Stracchino cheese
  • ½ cup Riviera Ligure Extra Virgin Italian Olive Oil DOP
  • 1 ¼ cups water
  • salt to taste
